When the beans are still green, they contain a high level of natural antioxidants such as phenolic acid, and chlorogenic acid (CGA), typically accounting for 5-10% of green coffee beans. Studies have shown that CGA can assist in blood glucose management, boost lipid metabolism and improve insulin resistance.
