Organic Sunflower Lecithin Powder is the concentrated form of organic liquid lecithin, which is made from organic sunflower oil. Lecithin powder contains both lipophilic (oil-friendly) and hydrophilic (water-friendly) properties. Often it is used in dry beverage formulas consisting of watersoluble ingredients and oil-soluble ingredients, to improve solubility and stabilize the reconstituted products. Lecithin is also known to contain phosphatidylcholine, which has an amino acid choline attached to it. Choline is essential in supporting liver health, cognitive function and assisting with fat metabolism. This Organic Sunflower Lecithin is suitable in various applications including ice-creams, instant soups, bakery, confectionary, and dry beverages.
